Corn semolina with vegetables

Koruzni zdrob (polenta) z zelenjavo

Ingredients: (for 3-4 persons) 250 g corn semolina 1 medium onion (chopped) 2-3 cloves garlic (chopped) 1 medium leek 1 large zuchinni 200 g mushrooms sliced thinly (champignons in this recipe) 1 can diced tomatoes fresh parsley, oregano, basil salt and pepper, turmeric Method: Cook corn 

Zuchinni and mushroom moussaka

Musaka z bučkami in šampinjoni

Ingredients: (for 4 persons) 4 large potatoes sliced thinly 1 large zuchinni sliced thinly 200 g mushrooms sliced thinly (champignons in this recipe) 100 g grated vegan cheese (GreenVie Gouda) Bechamel sauce: 6 dl water 2 dl oat milk (or any other plant milk) 2 

Spelt “risotto” with zuchinni, green pepper and mushrooms

Pirina "rižota" z bučkami, zeleno papriko in šampinjoni

Sestavine: (for 2 persons)

  • 200g pire
  • 1 srednje velika čebula (nasekljana)
  • 2-3 stroke česna (fino nasekljane)
  • 300g bučk
  • 1 zelena paprika
  • 200g gob na tenko narezanih (šampinjoni)
  • svež peteršilj in koper
  • sol in poper, kurkuma

Priprava:

  1. Piro speremo z vodo in kuhamo v vroči in slani vodi približno 15-20 minut.
  2. Očistimo in narežemo šampinjone, papriko in bučke)
  3. Narežemo čebulo in jo prepražimo na 3 žlicah rastlinskega olja, da postekleni.
  4. Dodamo narezano papriko, bučke in šampinjone ter kuhamo še nekaj minut, dokler se ne zmehčajo.
  5. Dodamo 2-3 stroke nasekljanega česna, nasekljan peteršilj, ščep ali dva kopra in po okusu dodamo sol in poper.
  6. Če želite, lahko dodate tudi dimljeno papriko v prahu ali/in kajenski poper, če želite, da je bolj pikantno.
  7. Dodamo kuhano piro in premešamo.
  8. Serve and enjoy! 🙂

Še bolj okusno je če dodamo nekaj domačega veganskega parmezana or nutritional yeast 🙂
